The temperature problem when transporting confectionary
To prevent sweets or sugar from becoming sticky, it is recommended that they are kept in cool places at a temperature below 22ºC during storage and transport and are protected from direct sunlight or being put near heat sources.
Low temperatures are not good either, as they cause chewing gum and other gummy sweets to become brittle and difficult to chew.
The moisture problem when transporting confectionary
Sweets have a high sugar content which attracts water vapour and with it any odours in the air, so they should ideally be kept in a dry, odour-free environment.
They should be transported in their original packaging in conditions where the relative humidity (RH) is less than 50%, away from vapour or droplets caused by condensation.
Remember that extreme temperature changes help to create condensation.
